Relaxed Monday – June Chefs’ Club

Since last month was such an extravaganza, we played it low-key. We got together on a Monday evening just to have a little time cooking with our girl friends and to catch up on life! We all arrived quite tired and wondering why on earth we had decided to take on such a full evening on a Monday night. Many of us were exhausted from work and hauling food and recipes across town  seems like a daunting task!  But, it didn’t take long to remember why we were doing this 🙂  Cooking together is something we look forward to and a way to just relax and enjoy our friendships. It was a great night!
FRUITS: Blackberries & Honeydew
VEGETABLES: Spinach & Rhubarb
Roles for this month:
  • Cocktail: Sarah – Blackberry Herb Cocktail.  This drink mixed sweet (blackberry sauce) with savory (rosemary) for a shockingly refreshing Prosecco cocktail! I was a bit skeptical about the rosemary, but ended up loving this drink.
  • Appetizer: Stacey –  Bruschetta with Fontina and Greens. A different take on classic bruschetta. SO good.
  • Salad: Kim – Green Tomato and Honeydew Melon Salad.  Kim actuatlly couldn’t find green tomatoes and used red instead.  We all thought the red gave it a splash of color and thought the flavor was fantastic! I haven’t tried it with the green tomatoes, but with red, it was amazing! SO refreshing and different. In addition to the tomatoes and honeydew, cilantro, cumin, and pepitas played a key role. An awesome take on a light, summer salad.
  • Main: Laura – Lemon-Rhubarb Chicken. The stuffing and the sauce really made this fun and different! It was a delicious use of the key ingredient.  I would highly recommend!  
  • Side (veggie):  Tara (was unfortunately ill and couldn’t make it at the last minute)
  • Side (starch): Erin – Rhubarb Pilaf
  • Dessert: Meredith – Blueberry Rhubarb Crisp with Pistachio Crust.  Heaven 🙂
  • Vino: Kelly B
  • Kitchen Helper: none
  • Not present: Sadly, we missed Kel and Tara on this one 😦

Delicious! The main and the side were a perfect flavor complement.

Here's the dessert before it went into the oven to bake. Unfortunately, I forgot to get a pic of the finished product! It was HEAVENLY and served with vanilla bean ice cream 🙂
