March – Tapas in the Back Bay

So, by March, we were starting to get a bit tired of the “winter” ingredients, so we decided to shake it up a bit.  Instead of special monthly ingredients, we decided to go on a “theme”: Spanish Tapas!

Not only that, but Stacey and I had recently been kicked out of our apartment (so sad…new landlords, etc, etc).  But, thankfully, we ended up in a better kitchen than any of us could have dreamed of: a posh 6-story brownstone in the Back Bay. It was truly beautiful and such a fun experience to be able to cook in a kitchen like that.  Special thanks for letting us crash!

  • Main – Sarah – Quick Chicken and Chorizo Paella
  • Savory Tapa – Kat – Roasted peppers , onions, and eggplant (I added zucchini) — A colorful dish!  I was assigned to an appetizer. But as usual I am indecisive. I always seem to struggle between two options so I made both. The fried eggplant I made turned out a bit soggy, lucky for me that Stacey made the same recipe for her side dish. Her version was fabulous. I was able to watch Stacey and I learned the importance of the proper temperature for frying. Thankfully my second dish of grilled veggies worked out. Basically we switched assignments since my recipe was more of a side dish and Stacey’s more of a appetizer.
  • Savory  Tapa – Stacey – Fried Eggplant with Honey, Mint, and Sesame Seeds
  • Savary Tapa – Meredith – Oven-Roasted Wild Mushrooms with Goat Cheese and Chile Oil
  • Savory Tapa – Tara – Cheese and Olive Empanadillas
  • Dessert – Laura – Tres Leches Cake
  • Before/After Dinner Drink: Erin – Spanish cream coffee, Bottle of Oloroso Asuncion Spanish Dessert
  • Wine: Kim – Homemade Sangria!
  • Kitchen Helper/Music:  Kelly – traditional Spanish Flamenco! Pepe Romero, etc.

This was fantastic, Sarah! (She even made a vegetarian friendly version for our resident vegetarian)

An array of colors! Wonderfully healthy, too 🙂
