February 2008 – The infamous Guest Dinner

So, we have a few months under our belt and so we thought we could handle changing it up a bit…adding a bit of fun and a bit of a challenge.

The Task: Create a mouth-watering-ly delicious 4-course meal…that is, a full sit down dinner, for 20 people.  Yes, that’s right TWENTY. Yikes!

Quite honestly, the funniest part about this month (aside from our middle-school girlish nervousness in trying to figure out who to invite!) was how on earth we were going to have enough plates, forks, wine glasses and CHAIRS for 20!  The week leading up to our dinner was like a 3-ring circus…counting silverware, ironing tablecloths, scrambling around the city to pick up chairs…Kat and Brian even disassembled their kitchen table to bring it along with them!

After a week of making sure we had JUST enough chairs we sat down to dinner and had a lively discussion, albeit a bit tight on the leg room. Just as we are finishing up the salad course, another guest arrives!  My heart was beating more and more quickly….how do we add him in? How can we be gracious and fit him around the table and into the conversation and not make it awkward that we’ve already eaten two courses…and oh yeah… what on earth are we going to SIT him on?!?!  Sarah, in her quick thinking, saw a small magazine table in the corner of our apartment and snagged it….oddly enough, it worked out rather smoothly!  A little tight on leg room, but that made for a cozy dinner.  And now that little table is our stand-by stool 🙂  Necessity is the mother of invention!

  • Appetizer – Erin – Spicy Sweet Potato and Coconut Soup
  • Salad Course – Kelly – Spinach Salad – This salad was fantastic… it had a warm topping spooned over the spinach and was different and delicious! (I made it without the scallops.)  I served it with this Lemon Balsamic Vinaigrette.  (I played around a bit with the proportions, as the initial proportion seemed quite heavy on the oil.)
  • Main Dish – Kathleen and Meredith – they made TWO! How ambitious: Lamb and Fish
  • Lamb dish: Roasted Lamb with Lemon and Rosemary (Kat)
  • Fish dish: Grilled Halibut with Papaya-Mint Salsa   (Mer)  (Substitute a white fish for the Salmon – Meredith used Halibut)
  • Side – Kim – Sweet Potato Fries with Garlice and Herbs.
  • Side – Tara – Roasted Vegetables with Pecan Gremolata.
  • Dessert – Sarah – Lemon Cheesecake with homemade Hazelnut Crust.  This was a true show-stopper! I would definitely recommend this recipe! 
  • Before/After Dinner Drink – Stacey – Stacey actually made TWO drinks since we had such a large crew!   City Slicker – (1 cup Brandy, 1/4 cup Triple Sec, and 2 T. lemon juice).  POM-ADE (from Bon Appetit February 2008 — 1 cup lemonade, 1/2 cup club soda, 1/4 cup pomegranate juice, ice cubes.  Add 2 T. vodka to each drink.) ENJOY!!!
  • Kitchen Helper/Music – Laura
  • Wine – Our Guests – Thanks guys!  Brian, Sam, Trevor, Jon, Jonathan, Dan, Ben, Kevin, John, Josh, and Axel.

Special ingredients for February:

  • Fruit: Lemon and Papaya
  • Vegetables: Cabbage and Sweet Potato

Et voila!  Not bad for running around all week…thanks guys, for a fabulous evening.
